Recipe: 6 Week Bran Muffins

As a child I remember there always being bran muffins on offer at just about every church or social gathering I went to with my mom. There's something nostalgic about these tasty little treats!

If you can't find Bran on the grocery store shelves in the UK, health shops sell them! I tend to add extra mixed fruit and a dash more oil than the recipe calls for as this helps prevent them from ending up too dry.

Ingredients:2 cups bran (wheatbran)125g dried fruit mix (raisins, sultana's, orange peel etc)1.5 cups brown sugar2.5 cups wholewheat flour2 cups milk2.5 tsp bicarbonate of soda0.5 tsp salt2 eggs, slightly beaten125ml oil Method:Preheat oven to 180 degrees C.Mix dry ingredients in a bowl.Make a well in the centre and add the eggs, oil and milk.Mix thoroughly for a few minutes.Spoon mixture evenly into greased/lined muffin tins and bake for approximately 20-25 minutes.Serve warm with butter.This mixture can be placed in a sealed Tuppaware container and kept in the fridge for up to 6 weeks.Makes 24 medium or 18 large muffins.
